Tomato & Bocconcini Salad

This is my favourite summer salad - a classic for a reason
Here I have added a bit of a twist with the addition of salami & feta

Serves 2

Ingredients

    2 red Capsicums
    3 Tomatoes
    60 grms Feta
    6 small balls Bocconcini or 2 large balls
    Basil leaves 
    5-6 slices of good quality salami of your choice
    Salt/Pepper to taste
   
Method

      Heat a pan on high heat & add a little oil.
     1/2 peppers and remove stem & seeds, cut into rough medium sized triangle shapes.
     Place into heated pan and sauté quickly to soften and add flavour.
     Cut tomatoes and place in a bowl along with the peppers.
     Tare the basil loosely and add, do the same with the salami.
     Crumble basil, & tare the Bocconcini into the tomato mixture, season, mix well and
     plate up.
