Courgette & mint fritters with Tzatziki & Minted Yoghurt Aioli

Tasty Courgette Fritters

Serves 4

Ingredients

    1 Courgette
    2 tsp salt
    2 tsp Cumin Seeds
    1/2 diced Onion
    2 Eggs
    small handfull of chopped mint
    120 grms Feta
    300 grms Flour
    1 tsp baking powder

Method

    Grate the courgette into a sieve over a bowl and add the salt, mix and place to one side for 15-20 min.
    Heat a pan with a little oil and add the cumin seeds, fry lightly then add the diced onions and cook till transparent. Put aside
    Squeeze the courgette and put to one side.
    Add the onion mix to the courgette liquid along with the 2 eggs, chopped mint & feta. Stir to combine.
    Add the flour & baking powder and stir to a smooth batter.
    Heat a fry pan to 3/4, add a little oil and a knob of butter.
    Place 4 spoonfuls of batter in the pan and cook for 2-3 minutes or until golden brown on both sides. Remove and drain on a rack or kitchen paper.
    Repeat till all batter is used.

Minted Yoghurt Aioli

Ingredients

    1-2 Cloves Garlic
    2 Sprigs Mint
    2-3 spoonfulls Greek yoghurt
    2-3 Spoonfulls cannonhill Aioli
    1/2 juice of a lemon

Method

   Chop garlic & mint finely add to a bowl with the rest of the ingredients and mix well.
    Serve with the warm courgette fritters.
