Peanut Satay

This makes a great marinade for Chicken, Lamb, Beef, Tofu.
Here's a quick recipe you can use.
  Meat of choice
  2 good spoonfuls of peanut satay sauce
  1/4 cup coconut milk
  1 tbsp Fish Sauce
  juice of 1 lime

Mix togehter throughly, cover and place in the fridge overnight to marinade.
The next day place on skewrs with onions & capsicums.
Cook and serve with rice and the remaining peanut satay sauce
